2007 - Domaine Overnoy - ARBOIS PUPILLIN CHARDONNAY "CIRE BLANCHE"

The Cuvée
Domaine Overnoy-Houillon, situated in the heart of Jura's Arbois-Pupillin appellation, is esteemed for its commitment to natural winemaking practices. The "Cire Blanche" cuvée, named after the distinctive white wax seal adorning each bottle, is crafted exclusively from Chardonnay grapes cultivated on blue marl and limestone soils. This terroir imparts a unique minerality and vibrancy to the wine. Vinified without the addition of sulfur and aged for 18 months in oak barrels, this cuvée exemplifies the purity and authenticity that have become synonymous with the Overnoy-Houillon legacy.

The 2007 Vintage
The 2007 vintage in Jura was characterized by a cold, dry winter followed by a warm spring and summer, yielding grapes of exceptional quality. In the glass, this wine presents an intense straw-yellow hue with golden highlights. The nose is greeted with complex aromas of white peach, pear, lime, hawthorn, almond, and honey. On the palate, it is powerful and full-bodied, with a harmonious balance of acidity and a long, persistent finish. This vintage is noted for its remarkable aging potential, allowing it to develop further complexity over time.

The Estate
Founded by the legendary Pierre Overnoy, the estate has been a pioneer in natural winemaking since the 1980s. Today, Emmanuel Houillon continues this tradition, producing wines that are revered for their purity and expression of terroir. The vineyards are meticulously tended, adhering to biodynamic principles, and each vine receives individual attention to ensure the highest quality fruit. The estate's dedication to minimal intervention in the cellar results in wines that truly reflect the character of their origin.
