Limited to just 500 bottles, Kaiman is a rare and masterful blend that showcases the depth and complexity of aged rum. This exceptional cuvée is the result of an extraordinary union of origins and vintages, meticulously crafted to express both the richness of its components and the vision of La Compagnie des Indes.

A Blend of Legends

The heart of Kaiman lies in an extraordinary cask of traditional rum from Guadeloupe, originally laid down in 1973. After decades of maturation, it was transferred into 1,000-liter foudres ten years ago, allowing the rum to continue evolving with grace and depth. Complementing this is a second component: a blend of two rums distilled in 1993—one from Guyana and one from Jamaica—married in 1995 and aged together in an ex-rum cask in Europe.

The Guyanese portion comes from three iconic stills: the Savalle column still from Diamond, the wooden Enmore Coffey still, and the double wooden pot still from Port Mourant, all previously housed at the now-closed Uitvlugt distillery. The Jamaican element is a classic Wedderburn-style pot still rum, known for its robust, funky character.

The final composition of Kaiman reflects its remarkable pedigree: 72.2% Guadeloupe 1973 and 27.8% Guyana/Jamaica 1993.

Tasting Notes

  • Nose: Deeply expressive and unmistakably distinctive, the nose opens with intense notes of amber resin, patchouli, roasted coffee, and tonka bean. As the glass breathes, a rich rancio quality emerges, adding layers of aged complexity.

  • Palate: The palate is bold and sophisticated, bursting with tertiary aromas. Initial notes of leather and freshly roasted coffee give way to hints of toasted bread, earthy roots, and warm spice—pink pepper, quinine, and subtle herbal undertones.

  • Finish: Exceptionally long and pronounced, the finish is marked by a firm bitterness—a hallmark of its advanced age—alongside echoes of licorice, seasoned wood, and a dry, powerful elegance.
