The Cuvée
Château Pavie, located in Saint-Émilion, is one of Bordeaux's most prestigious estates. Rather closed in their youth, they require seven or eight years of cellaring before releasing their powerful aromatic bouquet: cherry, blueberry, blackberry, prune, roasted coffee, oak wood... After a lively attack on the palate with powerful but very fine tannins, the whole is distinguished by magnificent richness and persistence.
The 1919 vintage
An honorable vintage. The 1919 vintage marked the beginning of peacetime and benefited from an exceptionally favorable start to the season. In Bordeaux, the 1919 vintage was of good quality and the wines tasty, despite the weather difficulties. Late summer humidity favored the spread of vine diseases, while excessive heat in August scorched the vines.
Château Pavie 1919 presents a tinted color, a testament to its venerable age. The nose reveals complex tertiary aromas of undergrowth, leather, tobacco and dried fruit. On the palate, the attack is delicate, with mellow tannins and balanced acidity, offering a persistent, elegant finish.
The estate
In ancient times, this property was known for its fruit-growing, in particular the pavie peach, which gave its name to the future château that was built in the 19th century. Owned by the Valette family at the time, the château was classified “Premier Grand Cru Classé B” in Saint-Emilion in 1955. Since 1997, when Gérard Perse bought the property, the cru has gone from strength to strength. The 2012 update of the Saint-Emilion classification was the crowning achievement, with the promotion of the château to “Premier Grand Cru Classé A”. Pavie's vineyard is the most extensive of all Saint-Emilion's 1er Crus, and also boasts the oldest vines in the appellation, some of which are over a century old. Produced from low yields (28-30 hl/ha) and hand-harvested, Pavie wines are aged for up to 24 months in new oak barrels.
